It is only <strong>northern bonito<\/strong>&nbsp;the one that exceeds 4 kilos in weight and is caught in the Bay of Biscay with hooks so that the fish does not suffer and offers a higher quality of meat.<\/p>\n<p>So, we encourage you to prepare dishes with this wonderful fish such as this one <strong>white tuna with tomato, peppers and onion.<\/strong><\/p>\n<h4><strong>INGREDIENTS: (6 people)<a href=\"https:\/\/www.culinaryspain.com\/wp-content\/uploads\/2020\/08\/FullSizeRender.jpg\"><img decoding=\"async\" class=\"alignright wp-image-4113\" title=\"White tuna with tomatoes, peppers and onions\" src=\"https:\/\/www.culinaryspain.com\/wp-content\/uploads\/2020\/08\/FullSizeRender-819x1024.jpg\" alt=\"White tuna with tomatoes, peppers and onions\" width=\"319\" height=\"399\"><\/a><\/strong><\/h4>\n<ul>\n<li>1 kg of<strong> fresh tuna<\/strong><\/li>\n<li>300 gr of homemade fried tomato<\/li>\n<li>2 cloves garlic<\/li>\n<li>2 spring onions<\/li>\n<li>1\/ 2 red bell pepper<\/li>\n<li>50 ml of white wine<\/li>\n<li>Aove ( extra virgin olive oil)<\/li>\n<li>Salt and pepper<\/li>\n<li>2 bay leaves<\/li>\n<\/ul>\n<h4><strong>STEP BY STEP RECIPE:<\/strong><\/h4>\n<ol>\n<li>In a low saucepan or large frying pan we pour Aove all over the surface but only a little, just enough to fry the<strong> nice<\/strong>. If it has not been cut at the fishmonger, you have to remove the skin and remove the bone and leave more or less large pieces like the ones in the photo. If it is in small pieces, nothing happens. Heat the oil well and cook the tuna for half a minute on each side. Just enough to seal it and brown it lightly. If you fry it or cook it too much, the tuna will be very dry. Como dec\u00eda cuando hice el marmitako, \u00a0la temporada del bonito del norte va desde principios de junio hasta finales de octubre, que es cuando este pescado aparece en la cornisa cant\u00e1brica. S\u00f3lo es bonito del norte\u00a0el que sobrepasa los 4 kilos de peso y se captura en el Cant\u00e1brico con anzuelo para que el pez no sufra y ofrezca una mayor calidad de su carne. INGREDIENTES: (6 personas) 1 kg de bonito fresco 300 gr de tomate frito casero 2 dientes de ajo 2 cebolletas 1\/ 2 pimiento rojo 50 ml de vino blanco Aove ( aceite de oliva virgen extra) Sal y pimienta 2 hojas de laurel RECETA PASO A PASO: En una olla baja o sart\u00e9n grande echamos Aove toda su superficie pero solo un poco, lo suficiente para fre\u00edr el bonito. Si no te lo han cortado en la pescader\u00eda, tienes que quitarle la piel y quitar la espina y dejar trozos m\u00e1s o menos grandes como los de la foto. Si es a trozos peque\u00f1os tampoco pasa nada. Calienta bien el aceite y pasa el bonito medio minuto por cada lado. Lo suficiente para sellarlo y dorarlo ligeramente. Si lo fr\u00edes o cocinas demasiado el bonito queda muy seco \u00a1ojo\u00a1 Reserva en una fuente para servir y echa un poquito de sal. Cortamos en juliana las cebolletas y el pimiento en tiras, pelamos los ajos y los aplastamos con un cuchillo\u00a0 y lo ponemos todo sobre el resto de aceite donde hemos dorado el bonito, con media cucharadita de sal y una pizca de pimienta. Pochamos a fuego bajo durante unos 10 minutos junto a las dos hojas de laurel. Incorporamos el tomate, removemos, dejamos cocer todo durante un par de minutos, subimos el fuego y echamos el vino blanco y dejamos otros 3 minutos hasta que se evapore el alcohol. Si es a trozos peque\u00f1os tampoco pasa nada. Calienta bien el aceite y pasa el bonito medio minuto por cada lado. Lo suficiente para sellarlo y dorarlo ligeramente. Si lo fr\u00edes o cocinas demasiado el bonito queda muy seco \u00a1ojo\u00a1 Reserva en una fuente para servir y echa un poquito de sal. Cortamos en juliana las cebolletas y el pimiento en tiras, pelamos los ajos y los aplastamos con un cuchillo\u00a0 y lo ponemos todo sobre el resto de aceite donde hemos dorado el bonito, con media cucharadita de sal y una pizca de pimienta. Pochamos a fuego bajo durante unos 10 minutos junto a las dos hojas de laurel. Incorporamos el tomate, removemos, dejamos cocer todo durante un par de minutos, subimos el fuego y echamos el vino blanco y dejamos otros 3 minutos hasta que se evapore el alcohol.
