Ham cutting workshop

Ham is one of our culinary jewels and is a symbol of Spanish culture and gastronomy. Although it is a true artisan delicacy, little do we know about its peculiarities and we are not able to appreciate and verify the quality of any type of ham. serrano.

How many times have we “carved” a leg of ham at home? With this workshop we will discover how to properly slice a ham and learn how to do it, if not as an expert, then to avoid spoiling it and obtain thin slices.

Through tasting we will learn to check the quality of the ham. We will learn to notice its color or its shiny appearance, which is produced by the surface fat when sliced, and we will even be able to discover its age by its marbling.

We will learn to use the senses of sight, touch, smell and taste in an appropriate way, since the tasting will help us to discover the intense and pleasant aromas, the importance of rancidity in its right measure and how we can discover sweet flavors, together with salty and even bitter ones that will indicate how the winter was in its curing period.

In the tasting we will taste a variety of Iberian hams with denomination of origin where we will see the different qualities and textures of ham and its different flavors according to its origin, breeding and feeding.
