Vegetarian dumplings with flaxseed and cheese
Today I hope to cheer you up with these vegetarian dumplings with flaxseed and cheese, The "Vegetables", a very fun and healthy way of eating vegetables for everyone, which invites both adults and children to eat them.
They are already healthy by themselves because of the large amount of nutrients and vitamins that vegetables provide, I have added flax seeds that add extra fiber, minerals such as magnesium and zinc and omega 3.
And also, instead of frying them and avoiding extra fat and calories. I have used my new Princess air fryer for the first time, which with only air and heat leaves a wonderful golden and crispy finish.
INGREDIENTS: (14/18 units)

- Half a bunch of shredded broccoli (approx. 200gr.)
- 1/2 medium sweet potato peeled and roasted
- 1/2 grated carrot
- 2 eggs
- 1 tablespoon cream cheese
- 3 tablespoons grated Parmesan cheese
- 4 tablespoons flaxseed or breadcrumbs
- 1 teaspoon salt
- Grated pepper
- Bread crumbs for breading the dumplings
STEP BY STEP RECIPE:
- The first step we have to do is to take a broccoli floret and remove the stems. WARNING! Do not throw them away, you can use them for a cream or for a salad, cut them very thin and microwave them for a few minutes with salt and oil. Then we grind the broccoli until it is like a couscous, like tiny grains.
- Peel and grate half a carrot. Wash the sweet potato, and with skin, put it in a bowl with a little salt and oil, covered with plastic wrap, about 7/9 min, on high power in the microwave. Until it is soft. It depends on the size of the sweet potato, but be careful that it does not get dry or dehydrated. When it gets warm peel it, you will see how easy it is to remove the skin and cut it into squares.
- In a bowl put all the ingredients and mix with a spatula until well integrated.
- In a deep dish, put a good amount of breadcrumbs. Now with your hands form small balls with the dough, you will see that it is wet and does not need to be dipped in egg to coat it.
- Put them one by one in the bread crumbs and dredge them. With your hands you can give them a round shape.
- Finally, the only thing left to do is to cook them. The traditional way would be to fry them in a large amount of olive oil in a frying pan, until they are golden brown. But I am going to use my new air fryer, which with only air and heat leaves them well browned and crispy and thus we save odors in the kitchen and extra calories.
