Quick lemon and meringue pie

My daughters love lemon cakes, and this one quick lemon meringue pie is delicious and uncomplicated to make lemon cream, since it is enough to mix condensed milk, a few eggs and lemon!

INGREDIENTS:

  • 2 eggsquick lemon meringue pie
  • 400 gr of condensed milk
  • Juice of 3 lemons
  • 200 gr of Maria type cookies
  • 70 gr of butter
  • 60 ml of water
  • 120 gr sugar

STEP BY STEP RECIPE:

  1. The first step is to make the base of the cake, which is the classic cookie base. To do this we crush them and then add the butter (leave it out of the fridge for a while before making the cake). Cover the bottom of a 16-18 cm round container with this preparation, and with the help of your hands (remember that always very clean!) we squeeze so that it is well firm and well distributed throughout the bottom. Reserve in the refrigerator. Preheat the oven to 170ºc.Quick lemon and meringue pie
  2. Now, in a clean mixer or in a bowl, add the condensed milk, the yolks of the two eggs (the whites are reserved for the meringue) and the strained juice of three eggs. lemons. With this amount you get enough lemon flavor and acid, as we like at home, but if you prefer softer just add the juice of 2 lemons. Beat 1 minute until it is well integrated in a blender or I do it with a whisk.
  3. Pour this preparation over the cookie base and bake for 35 minutes or 25 minutes if you have only two (the dough is thicker and takes less time to set).

  5. Put the meringue on top of the cake, I did it with a spatula and made spike shapes, but you can use a piping bag and decorate it according to the nozzles you have. With spirals, with flakes, etc.
  6. Finally, turn on the oven broiler, put the cake in the oven and brown the meringue, this may take a few minutes, so be careful because it can easily burn. You can also do it with a blower.
