This bean and piquillo peppers hummus is a different kind of hummus, as you probably knew that it is usually made with chickpeas. In addition, the touch of piquillo peppers gives it a sweetness and a very special color, in addition to providing a lot of beta-carotene.

INGREDIENTS: (2/3 portions))
- 1 jar (400g) of cooked white beans
- 6 piquillo peppers
- 1 tablespoon tahini
- Half a squeezed lemon
- 1 clove garlic
- Teaspoon of cumin and salt
- Aove and seeds for decoration
White sauce :
- 2 tablespoons ricotta
- 1 of mayonnaise
- Pinch of garlic powder and black pepper
- Lemon squeeze
- Fresh mint, chopped
STEP-BY-STEP PREPARATION:
- Put all the ingredients in the blender, except for the sauce, and blend well until a creamy texture is obtained.
- Some tricks: occasionally stop the mixer, and with a spatula lower the remains of the walls and beat again. You can also add a tablespoon of water, or more, to get more creaminess. Give it the point that you like and remember to taste it to see if you like it with more salt or cumin or lemon.
- For the sauce, just put everything in a small bowl and stir with a spoon.
