Leeks stuffed with brandade with pea cream
These leeks stuffed with brandade with peas cream is a spectacular combination of flavors, a contrast between the salty cod with the sweetness of the peas and the texture of the leeks that we love at home.
I use the leeks already cooked, You can buy them fresh and boil them (the difficulty is to get them just right so that they are not mushy and can be opened well for stuffing).
INGREDIENTS:
- 1 jar of boiled leeks
- Olive oil
- Sesame
For the brandade:
- 500 gr of desalted cod
- 200 gr oil
- 100 gr milk
- 2 cloves garlic
- Pepper
STEP BY STEP RECIPE:

- For the brandade, In a saucepan, heat the oil over medium heat with
the peeled garlic cloves and confit for 5 minutes (do not let the oil smoke or boil). Then add the crumbled cod or in strips and confit over low heat for another 5 minutes.
- Remove from the heat and pour everything in a blender glass. We beat while pouring the milk little by little until we obtain a homogeneous mass (there are people who prefer to leave little pieces of cod, so to taste! We taste and rectify the salt if necessary and add a little black pepper.
- Drain the leeks well. Heat a little oil in a frying pan over high heat and brown the leeks on both sides, turning them carefully with tongs.
- Remove them to a board and with a sharp knife, open them vertically from top to bottom without splitting the leek in two. Place them in a baking dish and fill them with a little brandade and grill them for a few minutes until they take a light golden color.
- When serving, place a little pea cream on the base, two leeks on top, and sprinkle with sesame seeds.
