Carrot brownie
This carrot brownie is one of my favorite sweets, it is delicious, the touch of cinnamon and nutmeg give it a very special aroma and flavor, and for those who do not know, it does not taste like carrot (and that takes a lot.) Is a
healthy sweet, because it is made with whole wheat flour and lots of walnuts, which are an important source of omega 3, and with brown sugar, or if you prefer panela to make it even healthier.
INGREDIENTS:
- One cup ( breakfast size ) of finely grated carrots
- Half cup chopped walnuts
- One cup of brown sugar or panela
- One cup of whole wheat and white flour (half and half)
- One cup of mild olive or sunflower oil
- 3 eggs
- Half teaspoon ( coffee ) cinnamon and nutmeg
- One teaspoon vanilla essence
- One dessert spoon of baking soda
- 2 tablespoons of water
- Pinch of
salt
STEP BY STEP RECIPE:
1-I beat eggs (by hand or mixer), add sugar, beat, add oil, beat, add flour with cinnamon etc... beat.
2-At the end I add the carrot and walnuts and whisk for a minute or two to mix everything together.
3- I grease a large baking dish or baking tray with butter (so the dough spreads out and only reaches about two fingers thick) This helps it to take less time to bake and it is not a high cake but a brownie type cake).
4- Bake in a preheated oven at 180 degrees for about 25 minutes. Open, prick with a knife and if it is clean it is done!
5- Sprinkle with powdered sugar !! ready!!
If you put the dough in a sponge cake pan or 18 cm round cake pan, the thickness will be greater and it will take longer to bake, between 40 -60 minutes.
