Chicken curry with broccoli and goji berries
How many different ways do you know how to cook chicken? This recipe from chicken curry with broccoli and goji berries, is one of the muuuuuchas that can be made with this food so versatile and so grateful. As I always say, you have to use your imagination and use what you have in the fridge or what is going to go bad.
In this case, I had broccoli, and I added it to the stew together with a goji berries which out of curiosity, I bought the other day .... say it is a super food, which comes from a bush mostly from China, which has high antioxidant content, which can help prevent cancer, which strengthens the immune system, which helps reduce cholesterol, in short, a lot of properties! What is no longer known, is how many you have to eat to have an effect :). For me, the best diet is to eat a variety of everything without gorging yourself.
- 1 kg chicken in small pieces
- 2 glasses of chicken broth
- 1/2 can coconut milk
- 200 gr broccoli
- 2 teaspoons curry powder
- 1 spring onion
- 1 clove garlic
- Goji berries (a handful)
- Salt
- Olive oil
- Mint leaves
- Optional: some cashews or almonds.
STEP BY STEP RECIPE:
- Add salt and pepper to the chicken pieces and in a pot, heat a little olive oil and brown them over medium heat. Remove to a serving dish.
- In the same oil, fry over low heat the onion cut into brunoise and a clove of garlic finely chopped, about 5 minutes. Add the broccoli cut into small sprigs, and curry and stir for a minute.
- Then add the chicken and stir to integrate all the ingredients, the coconut milk and stir again, the broth and let it cook over medium-low heat for half an hour. A( You can also cook it in the pot for 15 minutes. In this case with only one glass of broth is enough, because the liquids will not evaporate so much),
- Serve it in a bowl and place the berries on top and some finely chopped mint leaves. If you like (I do:) we can add some cashew nuts or fried almonds on top.
This tasty dish of chicken curry with broccoli and goji berries You can accompany it with a basmati rice, for example, a cous-cous or even a quinoa boiled and sautéed with a little oil, so that it absorbs all the sauce that is to drink it!
