Creamy baked cheesecake

This creamy baked cheesecake is the famous cheese of La Viña Did you know it?

It is silky in the mouth, creamy and delicious ... I have put a little less sugar than the original recipe and I have not put jam, honey or any other topping. I like it just as it is, to appreciate the soft cheese flavor. Take note! Creamy baked cheesecake

INGREDIENTS:

  • 700 gr of cream cheese
  • 350 gr of cream 35% MG
  • 4 eggs
  • 20 gr cornstarch
  • 180 gr sugar
  • Optional: 25 gr of Parmesan or blue cheese

STEP BY STEP RECIPE:

  1. First beat the eggs with the sugar, then add the cream cheese with the whipping cream and the cornstarch until a creamy texture without lumps is obtained.
  2. Optionally, if you want to give it a slightly more cheesy flavor, add the Parmesan cheese powder or blue cheese and beat again.
  3. Wet a sheet of baking paper and wring it out and use it to line a 24-26 cm diameter springform pan and pour the mixture into it. .
  4. Preheat the oven to 200 degrees with heat up and down and bake for 50 minutes. Even if it is still liquid when you stir it, it will set on its own but will leave that creamy texture.
  5. Leave out of the oven to temper and then store in the refrigerator,

The tips or tricks I give you for this creamy cake baked cheese, are :

  • You can make your own versions (add cocoa powder, ginger, coconut, dulce de leche, etc.) all of them are great.
  • Another trick is that if you like it creamier, the kind that melts when you break it, bake it for only 35/40 minutes and, as I said, even if you see it very liquid, or that it moves a lot in the center when you take it out or move it, later, when it cools or hardens, it will solidify.
  • On the other hand, if you like it completely set, leave it for 55/60 minutes. If you see that it browns or burns on the surface, put a baking paper on top and that's it.
  • And as mentioned, if you want to give a “touch” of stronger cheese flavor, add Parmesan cheese, blue cheese or try the ones you like the most!
