Lentils with curried vegetables

I wanted to make lentils that were different from the traditional ones, and the result was these lentils with curried vegetables that have surprised me a lot and for good! They are delicious, very creamy and with a very special exotic touch, I recommend you try to make them! And don't worry if you can't find the red ones, you can make them with the usual ones or with the variety you like the most.

In addition, this type of red lentil or coral lentil, is very digestive, because it has no skin and also do not need soaking and cook very fast! And as a legume that is, you know, have a high nutritional value, lots of protein and fiber and very little fat.

INGREDIENTS (for 4 pax)

  • 320 gr. of lentils of the variety of your choice.Lentils with curried vegetables

The red lentil variety is very suitable for this recipe and does not require soaking.

  • 1 clove garlic
  • 2 cm fresh ginger
  • 1 spring onion
  • 1 leek
  • 300 gr of pumpkin or sweet potato
  • 1 carrot
  • 2 fleshy tomatoes or 3 tablespoons of tomato pulp
  • 1 liter of chicken or vegetable broth
  • 100 ml coconut milk
  • 1 teaspoon of coffee of curry
  • 1 teaspoon of coffee of turmeric
  • Fresh cilantro
  • Poppy seeds (optional)
  • Lima
  • Olive oil

STEP BY STEP RECIPE:

  1. First we boil the lentils with the broth over medium heat.
  2. We chop very finely the peeled ginger and the clove of garlic, the onion in brunoise, and the leek (white part) also finely, and fry it with a little olive oil in a frying pan over low heat for about 5 minutes.Lentils with curried vegetables
  3. Add the pieces of pumpkin or zahahoria (peeled) and sauté for another 5 minutes.
  4. Then add the curry and turmeric and stir. Add the peeled and diced tomatoes and turn up the heat a little and sauté them. Pour everything into the pot with the lentils, and let them cook for about 40 minutes, over low heat. We want them to be creamy.
  5. If you use the red variety of lentils, no pre-soaking is required and they are ready in 25 minutes.
  6.  The last 5 minutes we add the coconut milk and stir, it will give it even more creaminess and a spectacular flavor!
  7. Serve (optional) with a little chopped cilantro, some poppy seeds and half a lime on the side, to squeeze a little before eating.
