UTENSILS:
  • Cookie cuttersSolidarity cooking workshop: Christmas gingerbread cookies
  • Roller
  • Baking paper
  • Electric rods
  • Pastry bag or small freezer bag
  • Bol
INGREDIENTS: (for 16/20units)
  • 50 gr of butter
  • 70 gr of brown sugar or panela
  • 1/2 egg
  • 210 gr flour
  • 50 gr honey
  • 1/2 teaspoon of ginger ground
  • 1/2 teaspoon of cinnamon ground
  • 1/2 teaspoon nutmeg
  • A pinch of salt
  • Three drops of vanilla essence
INGREDIENTS for royal icing:
  • 1/2 egg white at room temperature
  • 5 drops of lemon
  • 125 gr powdered or impalpable sugar
  • Food coloring or food coloring pencils
  • Chocolate fondant
  • Sprinkles
STEP BY STEP RECIPE:
  1. First we will make the dough for these gingerbread cookies christmas gingerbread cookiesChristmas. To do this, beat in a bowl and with the help of a whisk, the butter (soft at room temperature) with the sugar and then add the egg and vanilla and beat again until creamy. Finally add the honey (if it is hard, melt it a little in the microwave for a few seconds) and beat.
  2. In another bowl mix all the dry ingredients and add to the previous mixture little by little, and stir with a spatula. Each time it will be thicker and thicker and when we can no longer stir, we do it with our hands, integrating the flour well into the dough and making a uniform dough. We finish this kneading on a clean worktop.Christmas gingerbread cookies
  3. We make a ball and wrap them in plastic wrap. We reserve in the refrigerator while we make the glaze. It can also be made the day before but then, to work with it, you will have to wait a long time to be able to manipulate it because it will be very hard (it all depends on the room temperature).
  4. Now we make the royal icing, which will be used to decorate the figurines. With a whisk, beat the egg whites until frothy, then add the sugar, little by little, spoon by spoon, and a few drops of lemon juice. The icing will be ready when it does not shine and forms peaks upwards when the whisk is raised.
  5. Now it is time to stretch the dough with a rolling pin. Sprinkle the rolling pin and the surface with a little flour and stretch the dough until it is about half a centimeter thick. You can use the cookie cutters you have, but if it is Christmas, better in the form of dolls, Christmas trees, stars ......
  6. If you have leftover edges of the dough, put them back together, knead and stretch to use it all. And if there is not enough to cut it, make a ball and flatten it with the palm of your hand to make a traditional round cookie.
  7. Always preheat the oven to 180ºc, with heat up and down and fan bake for about 10/12 min or until you see that they are golden brown. Remember that every oven is different and times can vary a lot! Take them out when they are golden brown and let them cool.
  8. Finally, and only if we want to give color to the decoration of our  Christmas gingerbread cookies, Divide the glaze into several bowls and pour a few drops of different food coloring in each one. Stir with a teaspoon, and thus obtain different colors.
  9. Now we are going to use a piping bag for each color, with a small round nozzle. If you don't have a nozzle, cut only the tip of the piping bag very small. And if you don't have a piping bag or nozzle, you can use a small freezer bag and cut one of its corners. Fill a third of each sleeve with the colors you have made and with it start drawing the eyes, the buttons of the dolls, some cuffs, a pocket, etc.
  10. Use your imagination to make them as colorful, or not, and with more or less drawings, as you prefer! The idea is to have fun, have a good time and then enjoy eating them.Christmas gingerbread cookies
