Quinoa and watermelon salad
Have you ever taken quinoa and watermelon salad ? Here is a very fresh and vitamin-packed treat for hot days!
It is a fun and ideal way to eat a salad with family or friends. It is also very healthy, quinoa has multiple properties: a high level of protein, minerals (calcium, iron, magnesium), and vitamins (C, E, B1, B2 and niacin) and phosphorus. To this we add the Omega 3 provided by walnuts.
- Half watermelon
- A glass of quinoa
- Two glasses of water
- Salt
- A handful of california walnuts
- 200 gr fresh goat cheese, feta cheese or Burgos cheese
- 1 avocado
- 1 cucumber
- 1 carrot
- Some mint leaves
- Extra virgin olive oil
- Lemon
- Salt
STEP BY STEP RECIPE:
1- Empty half of a watermelon with a spoon. Cut it into small squares and reserve 1/3. The rest for the snack.
2- Cook a cup of quinoa. Wash it first very well, then boil 2 cups of water, add salt and the quinoa and leave over medium heat until all the water is absorbed. Let it cool.
3- Peel and chop a cucumber and an avocado. Peel and grate a carrot, chop some mint leaves and mix all this with the watermelon and quinoa. Add some good nuts and pieces of fresh cheese. You can also use the one you have at home!
4- Dress with a vinaigrette of olive oil, salt and lemon juice. .
5- Arrange everything inside the half watermelon as a bowl.
