Christmas turkey stuffed with veal, foie gras, dates and apples

This bird is a classic for the Christmas holidays and I propose you a christmas turkey stuffed with veal, foie gras, dates and apples which is going to be the star dish during these special dates.

I advise you to use a good quality turkey. The one I have used is from Turkey lovers, a leading company in turkey meat products.

INGREDIENTS: ( for 12 persons)
  • A turkey of approx. 5 kgChristmas turkey stuffed with veal, foie gras, dates and apples
  • 450 gr of minced veal
  • 100 grams of pitted dates
  • 100 grams of foie
  • 2 apples (can also be pears)
  • 1 egg
  • 300 gr of spring onions
  • 2 sweet potatoes (700 gr.)
  • 1 glass of brandy
  • 12 French onions
  • 2 tablespoons brown sugar
  • 500 ml chicken broth
  • Extra virgin olive oil
  • 50 gr butter
  • Rosemary and thyme
  • Salt
  • Pepper
  • Pinch of nutmeg and cinnamon.
STEP BY STEP RECIPE:
  1. Clean the turkey, wash and dry it and put a glass of brandy inside and let it macerate overnight in the refrigerator.
  2. We make the farce, which is what we are going to stuff the turkey with: peel the apples and core and dice them and chop the onion.
  3. Christmas turkey stuffed with veal, foie gras, dates and applesHeat 4 tablespoons of Aove in a large frying pan and sauté the onion with a pinch of salt until transparent, about 8 minutes.
  4. Season the minced meat with salt and pepper and add it to the onion and sauté over medium heat for 5 minutes.
  5. Add the apples and chopped dates, mix and cook for 3 minutes.
  6. Add the chopped foie, a pinch of cinnamon and nutmeg and stir until the foie melts.
  7. Remove the filling to a bowl, and when it has cooled a little, add a beaten egg and stir.
  8. Turn the oven on at 160ºc with fan.
  9. Next we stuff the turkey with this stuffing, and with a long needle we sew the opening so that the stuffing does not come out. With kitchen string, I tie the two thighs together and cover them with a little silver foil so that the bones don't burn.
  10. We season well this christmas turkey stuffed with veal, foie gras, dates and apples,spread it with butter and sprinkle a little thyme and chopped rosemary. put it in a large oven dish.
  11. Peel the sweet potatoes, chop them and put them in another baking dish with salt, pepper and a drizzle of olive oil. Roast them for half an hour or until they are soft.
  12. We put it in the oven. After half an hour we sprinkle it with a little chicken broth and the rest of the time with the juices it has released. This operation must be repeated every 20 or 30 minutes so that it is very juicy.
  13. The oven time varies a lot depending on the oven you have, the temperature and the weight of the turkey. I have baked it for 3 hours and a half (about 40 min per kg), at 160ºc the first three hours, at 200ºc the last half hour to get that golden color and half an hour more of rest in the oven covered with aluminum foil. If you see that the skin is browning too much, cover it with aluminum foil.
  14. While the turkey, In a saucepan put the peeled French onions, the sugar and 200 ml of chicken stock. Cook over medium heat, stirring from time to time, until all the broth has been absorbed and the onions have caramelized. They will have a slight dark color due to the sugar.
  15. Once the sweet potatoes are roasted, pass them through the turmix with a little of the juice that the turkey has released plus 200 ml of chicken broth, until you obtain a puree to accompany the turkey (it does not have to be like a liquid cream, but like a thick puree or compote).
  16. After 3.5 hours, remove the turkey from the oven, cover with aluminum foil and let it rest in the oven for another 30 minutes.
  17. Accompanies the turkey with some onions and a little sweet potato puree and enjoy!
