Pea cream with fried green rice and quail eggs
This is how this new recipe turned out ! A delicious combination with different textures, and very complete ! cream of peas with fried green rice and quail eggs, The toasted sesame seeds and a dash of spicy olive oil give it a perfect spicy and tasty touch !
INGREDIENTS:
- 250 gr frozen peas
- 1 leek
- 1 spring onion
- Half a liter of chicken or vegetable stock
- 2 tablespoons of ideal milk
- Aove

- Two handfuls of green rice
- Sesame seeds
- Quail eggs
- Salt
STEP BY STEP RECIPE:
- In a saucepan I put a splash of oil, heat and sauté the leek and the onion that I will have cut into brunoise in advance.
- When the vegetables are poached, add the peas, the broth and a teaspoon of salt. I like chicken broth because it gives an extra rich flavor that, being salty, combines very well with the sweetness of the peas, but if you prefer vegetable broth, it will also be very tasty. I leave it over medium heat for about 15 minutes. If it has reduced too much you can add a little more broth. Add the ideal milk that will give it an extra creaminess and smoothness. Taste and adjust the salt if necessary, remove and blend with a blender or turmix.
- In a frying pan I put plenty of olive oil, and when it is very hot, I add a good handful of green rice, you will see how it instantly inflates as if it were a mini popcorn. I leave it on a plate with absorbent paper and repeat with another handful of rice.
- In another pan fry the fried quail eggs carefully so that the yolk does not break. They can also be poached, to taste!.
- In a deep plate I put the cream of peas, then a vertical row of green rice, another of sesame, the eggs to one side. And add a splash of oil that I had spiced, with a spicy touch very rich, you can also do it yourself: in a bowl add two tablespoons of oil and a pinch of paprika and stir.
