Gourmet nests with caramelized peppers, quail eggs and avocado

With this recipe, which, although it may not look like it, is very simple, from gourmet nests with caramelized peppers, quail eggs and avocado, , I give you a very original idea that will come in handy for a Christmas appetizer. In addition, I show you how to make the little baskets, which you can then fill them with whatever you want, from my proposal, to some prawns with salad, or some fig jam with Iberian ham and mozzarella, or sautéed mushrooms and foie gras.

  • Filo dough
  • Butter
  • 2 avocados
  • 8 quail eggs
  • A jar or can of piquillo peppers
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 3 tablespoons cream cheese
  • 3 tablespoons cream
  • 1 teaspoon curry
  • Pinch of salt
  • Olive oil
STEP BY STEP RECIPE:Gourmet nests with caramelized peppers, quail eggs and avocado
  1. The first thing, which takes the longest, is to put the peppers in a saucepan with the sugar and soy, stir and cook over medium heat until they caramelize and all the liquid has been reduced, about 25 minutes.
  2. In a bowl I put a couple of tablespoons of butter and melt it in the microwave for a few seconds. I spread the phyllo dough on the table and cut 24 squares of 12×12 cm. We will need 3 for each basket or nest and we will make 8 in total. Keep in mind that this dough dries very quickly. I use a damp cloth to cover them while I do the next step.
  3. With the help of a kitchen brush, I soak it in butter and paint each square of filo dough. First I make one, and place it on one of the holes of a muffin or cupcake mold. With the help of my fingers, I make a bowl shape. Repeat the process with two other squares, and overlap them, pressing them together so that they are well sealed or glued. Do not always put them in the same direction, do not make the corners coincide, but place them in different positions so that it looks like a star seen from above. I make 8 baskets in total (or all the ones in the mold if you want!
  4. I put them in the oven preheated to 200ºc and brown for about 7 minutes. Watch because it depends on each oven, the idea is that they are well browned without burning.Gourmet nests with caramelized peppers, quail eggs and avocado
  5. Meanwhile, cut the avocado into cubes and in another saucepan, put the cream cheese, curry and cream and a pinch of salt and stir until the sauce is well blended. Pour it into a cooking bottle.
  6. Finally, fry the quail eggs with a little olive oil. These eggs are very delicate and the yolk breaks very easily.
  7. Now all that is left is to fill the baskets, or nests, as I call them because it is like a cradle for the eggs:) . First we put a little bit of peppers in the bottom, then a few cubes of avocado, add a little bit of sauce, and crown with the egg. Ready!
