Granola energy bars with nuts and coconut
If you want a recipe for a healthy, tasty snack that gives you lots of energy, either to endure an intense morning of work, or before doing sports, for a trip or simply as a healthy snack, this is the perfect recipe for you. granola energy bars with dried fruit and coconut you will love them!
Like almost all my recipes, they are easy to prepare, just mix the ingredients and put it in the oven. I leave the ingredients for half a baking tray, which then cut into squares, as in the photo, you will get about 15 (depending on the thickness that you leave to extend them).
INGREDIENTS:
- 200 gr of granola (each brand has a different mix, but basically it has oat flakes, sunflower seeds, pumpkin seeds and nuts such as hazelnuts, cashews and some flour).
- 60 gr cashew nut, peanut, raisin mixture
- A handful of coconut flakes ( dehydrated)
- 1 medium egg
- 80 gr of whole wheat flour
- 50 gr coconut sugar or brown sugar, or panela sugar
- 1/2 natural yogurt
- 3 tablespoons of honey
- 3 tablespoons of milk (the milk of your choice, vegetable milk can also be used!
- 1 tablespoon coconut or sunflower oil
- 1 teaspoon baking powder
- Pinch of cinnamon
- In a bowl beat the egg, add the milk, the oil and the half yogurt and beat again, then the sugar and beat again.
- Then add the rest of the ingredients, and with a spatula mix everything until it is all integrated. You will see that it is a thick dough.
- On a baking sheet, place parchment paper, pour the dough in the center and with the same spatula, flatten the dough so that it is half a finger thick and give it a square shape.
- In a preheated oven at 180ºc, place the tray in the oven and bake for approximately 25/30 minutes until golden brown.
- Remove from the oven, let stand for 10 minutes and before it cools completely cut into squares.
