Curried hake with organic pink rice
I love making this recipe for hake curry with organic pink rice , when I have guests at home for dinner. It is a very simple dish to make, very tasty, with that exotic touch of coconut and curry, and surprising with pink rice, which you can accompany with another as basmati, but this pink rice is very peculiar, not only for the color, if not for its fruity aroma and for being originating in India, where it is symbol of vitality, happiness and joy 🙂
INGREDIENTS:
- 1 medium chive
- 2 carrots
- 2 leeks
- 2 cloves garlic
- 2 cm fresh ginger
- 1 chili pepper
- 2 sprigs of cilantro
- 2 teaspoons curry
- Half a can of coconut milk
- 500 gr of hake without skin or bones
- 200 gr of shrimp
- 100 gr of pink rice or the one you like the most.
- 1 teaspoon beet powder
- Aove
- Salt
STEP BY STEP RECIPE:
- Finely chop the garlic and peeled ginger and brown in a pan with a dash of Aove. Brunoise the onion and sauté with the garlic. Add the finely chopped leek (only the white part) and sauté. Peel and cut carrots also in small squares and add to the rest of the vegetables. Cook for another 5 minutes. You can use the vegetables that you like or have in the fridge, such as peas, green beans, broccoli, pumpkin, mushrooms ....
- Add the curry and chili and a little salt and stir over low heat so as not to burn. Then cover the vegetables with the coconut milk and chopped coriander. Stir.
- Cut the hake into cubes, season with salt and pepper and add it to the pot together with the peeled shrimps. Boil for 5 minutes and that's it! The fish needs little time to cook.
- The rice is cooked in twice as much water as rice, in this case if you add 100 grams of rice, about 200 ml of water, a teaspoon of salt, and a teaspoon of beet powder that will enhance its flavor. This rice is also spectacular if you replace 100 ml of water with 100 ml of natural orange juice. In any case, if you do not find it, use the one you have at home or you like the most, although basmati and brown rice are very good.
