Healthy pancakes with beet, oats and honey

The oatmeal, oh oatmeal!WHAT ARE THE BENEFITS OF EATING OATS?

It has a lot of protein, helps reduce bad cholesterol and blood pressure. Its carbohydrates are mostly of slow absorption, which provide a greater feeling of satiety after eating, and provide energy in a moderate but constant way.

It contains a lot of fiber, is rich in minerals and B vitamins. A 50 gram serving of whole grain oat flakes provides 25% of daily phosphorus, 20% of magnesium, 15% of iron, 50% of manganese and 22% of vitamin B1. It also provides some potassium, calcium, selenium, silicon, copper, zinc and vitamins E, B2 and B3, as well as numerous antioxidants and contains healthy fats!

INGREDIENTS:

*For 6 units:

  • 1 egg
  • Half cup oat flour 70 g
  • Half a cooked beet
  • One tablespoon honey
  • 75 ml milk
  • Half teaspoon of yeast
  • Half teaspoon of baking soda
  • A little Aove oil to grease the frying pan.
RECIPE ELABORATION STEP BY STEP:
  1. Separate the egg yolk from the egg white, being careful not to mix them, otherwise the egg white will not whip, and put it in a clean bowl. Whip the egg white with the help of a whisk.
  2. In another bowl put the yolk, then the diced beets. Mash with a fork and then with a blender.
  3. Add the honey, beat again, and the milk and beat again.
  4. Add the oat flour (which I get by finely grinding oat flakes) and then the baking powder and baking soda. Stir with a spatula until everything is well integrated.
  5. Finally add the whipped egg white, and with the spatula integrate it with the rest of the batter with enveloping movements, from bottom to top. Do not stir quickly or with a mixer that will lower the egg whites, and what we want to achieve and maintain is the fluffiness of the pancakes.
  6. Brush a frying pan with a little olive oil, heat over medium heat, pour a little dough in a circular shape and brown on one side, one or two minutes, depending on the fire and pan. I put the lid on so that they cook well on the inside without getting too brown. I turn them over and leave them for another minute.
  7. They are ready, just serve with a little plain Greek yogurt, some blueberries and a little honey or maple syrup, but you can do it with the fruit you like, with chocolate, jam.....
