Homemade artichoke cream with seeds

At home this homemade artichoke cream with seeds was a real discovery because we had never cooked them in a creamy texture, and the flavor is impressive.

Of course, it has to be artichoke season, so that the cream comes out with good flavor and the vegetable has enough flesh and we do not have to use a lot of artichokes for its preparation.

  • 6 artichokes
  • 1 leek
  • 1/2 spring onion
  • 1 medium potato
  • 1 clove garlic
  • 1 tablespoon of cream or ideal milk
  • 1 tablespoon butter
  • Lemon juice
  • Water
  • Salt and pepper
  • Water or vegetable broth

STEP BY STEP RECIPE:

  1. Like almost all the creams I make, the first thing I do is to sauté in a casserole, the spring onion, garlic and leek finely chopped, this time with a tablespoon of butter instead of oil. Poach over low heat for about ten minutes with half a teaspoon of salt.
  2. In the meantime hair artichokes and I keep only the heart and peeled tail, which is the tender part (if they are fresh) To do this I cut with a knife the tail, I peel it. I cut the base of the artichoke and with my hands or with the help of a knife I peel the artichoke until I am left with the inner part, which has a much lighter green color. Peel the six, and then cut them in two.
  3. Add them to the pan and sauté with the rest for another five minutes.
  4. Take the opportunity to peel the potato, chop it and add it to the pot. Stir. Cover with water or vegetable broth and cook over medium heat for 30 minutes without lid. Now it is time to mash everything very well. If you see that it is too liquid, put it back on medium heat until it reduces a little.
  5. Add the cream or ideal milk, whisk again, the juice of half a lemon and freshly ground pepper.
