Microwaved salmon in soy and ginger with vegetables

Today I prepare this microwaved salmon with soy and ginger and vegetables, It is a very quick and easy recipe that is not only good but also very healthy, among other things because of the Omega 3 provided by the salmon.

Microwaved salmon in soy and ginger with vegetables

Ingredients for 2 servings:

  • 2 salmon loins
  • 100 gr green beans
  • 50 gr of peas
  • 30 ml soy sauce
  • Ginger
  • 1 lemon
  • Salt
  • Pepper
  • Sesame seeds
  • Extra virgin olive oil (Aove)
  • Half a cup of brown rice, bulgur, quinoa or couscous.
  • Optional: chopped chives or cilantro.

Recipe elaboration step by step:

  1. Put the loins with a pinch of salt and pepper in a deep dish, add the soy sauce on top, grate a small piece (about half a nut) of fresh ginger, and a little grated lemon peel. Leave to marinate in the refrigerator while you prepare the vegetables.
  2. Wash the green beans, remove the ends and with a peeler remove the strand from both sides and cut them into thin strips. Put them in the silicone mold together with the peas, with a little salt and Aove and a little grated lemon peel and cook with the lid on in the microwave, for 5 minutes..
  3. In the meantime, boil the cereal you like or have on hand as a garnish for the dish (follow the manufacturer's instructions on the package).
  4. Put the loins with their sauce in the papillote container and cook in the closed papillote container for only 2-3 minutes. The time will depend on the thickness of the loin and how you like the salmon. With two and a half minutes it was juicy enough for us.
  5. Put the drained rice or whatever you have boiled on the plate, sprinkle with the sauce that has remained in the papillote mold itself, place a salmon loin on top, the vegetables, and some sesame seeds on top.
  6. And optionally you can sprinkle a little chopped chives or cilantro and you have ready this microwaved salmon with soy and ginger and vegetables.

*SUGGESTION: How about hake with leek, carrots, spring onions and white wine, or trout with diced ham?
