This pasta with roasted pumpkin sauce is an even healthier and more delicious way to make your favorite pasta, are you up for it?
Pumpkins are planted from early May through June and harvested in the fall months, so it's the season!
The pumpkin is an antioxidant vegetable, contains lutein and zeaxanthin, It has two antioxidants that are believed to help prevent cataracts and may even slow the development of macular degeneration. It is abundant in B vitamins and minerals such as iron, phosphorus and magnesium, is beneficial for the digestive system, is diuretic, prevents various types of cancer, strengthens the immune system.

INGREDIENTS: (4 servings)
- 360 gr of pasta, the one you like best
- 300 gr of pumpkin
- 12 cherry tomatoes
- 2 cloves garlic
- 50 ml of extra virgin olive oil
- 100 ml of ricotta, fresh cheese or burrata
- 1 teaspoon brown sugar
- 1 teaspoon oregano
- Salt and pepper
- Pasta cooking water or a little milk
- Fresh basil
- Parmesan cheese
STEP-BY-STEP PREPARATION: ( click here to see the video recipe)
- First, peel and cut the pumpkin into small pieces, season with salt and pepper and pour a good splash of Aove.
- Roast 300 gr of the pumpkin with a little salt, pepper and a drizzle of olive oil, at 170 in the air fryer or 180 in the oven for 25 /40 minutes, depending on the size of the pieces. Just prick with a knife and if it is soft it is done.
- Put a dozen cherry tomatoes and a couple of cloves of garlic in a bowl, with a teaspoon of oregano and a teaspoon of brown sugar, a little salt and pepper and 50 ml of Aove. Roast at the same temperature for 15 minutes.
- It only remains to beat everything roasted, with the ricotta or, fresh cheese, or burrata until it is very creamy, and if it is very thick add little by little, or a little cooking water if you are going to accompany it with pasta or and a little milk, until you get the texture that you like.
- Serve with some fresh basil leaves and grated Parmesan cheese and LOVE IT!
