Prawn and broccoli quiche
Today we prepared this prawn and broccoli quiche, I took advantage of the fact that I had 5 egg yolks in the fridge because I used the yolks to make a meringue 🙂 This recipe is great because we can serve it with a nice salad or a cream and you already have a lunch or dinner ready, or if you cut it into squares or triangles, it is ideal as an appetizer for snacks, parties or birthdays!
INGREDIENTS:
- 12 shrimp tails
- 150 gr broccoli
- 5 egg yolks
- 100 ml of liquid cream
- 100 gr cream cheese

- Salt and pepper
- 2oo gr pastry flour
- 100 gr butter
- 2 eggs
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon baking powder
STEP BY STEP:
- First, we make the shortcrust pastry (or if you prefer you can buy it ready made). In a bowl put the flour, salt, sugar and yeast, and in the center the butter (leave it at room temperature to soften) and the two eggs. With a wooden spatula stir vigorously and then knead with your hands until a ball is formed. Remove from the bowl, and on a clean worktop, sprinkle a little flour, and continue kneading the dough until there are no lumps, very smooth. Wrap it in plastic wrap and put it in the refrigerator for at least one hour (you can keep it longer, even freeze it).
- The broccoli is steamed or cooked in the microwave in a bowl with a little salt and a teaspoon of water and covered with plastic wrap for about 10 minutes.
- Preheat the oven to 180ºc 5 minutes. Meanwhile we extend the dough with the help of a rolling pin, trying to make a circular shape and thin layer. In a round and low bowl of about 20/22 cm, place the dough and press with your hands lightly to make the shape, and on it a vegetable paper on which we will place some weight (another mold, some legumes,,,,) We put in the oven 15 min. I do this, because if the dough does not rise and because the bottom of the quiche remains raw.
- In another bowl, add the egg yolks, cream, cheese, salt and pepper and beat. Pour this mixture into the quiche mold, which has been pre-cooked for 15 minutes, place small broccoli sprouts and prawn tails on top.
- We put in the oven until golden brown and we see that it is cooked, when pricked with a knife comes out clean, about 30 minutes. Accompany it with a good salad or a cream or gazpacho and you have a complete dinner or for a party or snack, cut into squares, it is a great snack!
