Vegan and gluten free chickpea and peanut warm vegan cookie
Oh my goodness, this vegan and gluten-free warm cookie with chickpeas and peanuts! Delicious, healthy and high in protein and fiber.
Maybe it sounds strange that it is made of chickpeas but I assure you that this sweet is a delicacy of Gods ... take it warm, with melted chocolate chips and accompanied by ice cream and is to die for. It is a very healthy recipe and very high in protein, no flour, no eggs, and with 100% natural ingredients, what more can we ask for to enjoy a sweet without remorse?
And as I said, if you are put off by the fact that it is made of chickpeas, give it a chance! We are used to associate legumes with grandma's stews, but nothing could be further from the truth. It is an ideal and very healthy alternative to flour, you'll see!
INGREDIENTS:
- 1 jar of boiled chickpeas and drained ( 370-400gr)
- 4 tablespoons of peanut butter.
- 2 tablespoons of honey.
- 2 tablespoons of panela or cane sugar.
- 1 teaspoon vanilla essence.
- 1 teaspoon of yeast.
- 1 teaspoon with baking soda.
- 100 ml of vegetable milk (soy, nuts, oats...)
- A pinch of salt.
- Dark chocolate chips gluten-free
*If you wish, you can make half the quantity, which is what I have done and it has given me enough for these two.

STEP BY STEP RECIPE:
- This recipe couldn't be easier! Preheat the oven at 180ºc.
- You can buy ready-made peanut butter or make it yourself. To do so, grind a good quantity of peeled natural peanuts until you obtain a homogeneous paste. You can leave it with small or small pieces, that goes according to taste, or totally as a cream. If you do not get the desired creamy texture add a little sunflower oil or vegetable milk.
- Put all the ingredients except the chocolate chips in a blender. Blend for about 10 seconds until the chickpeas are crushed. If you see that there are still large pieces, grind again.
- In a large baking dish or bowl, pour the dough. The idea is that the dough should only be about 2 cm thick.
- Sprinkle chocolate chips on top to taste.
- Bake in the oven for 20-25 minutes.
- Take it out and let it warm, ready! If you take it freshly made with vanilla ice cream is a real treat.
