Quinoa pizza with figs and Iberian ham
Who's in the mood for a nutritious quinoa pizza with figs and iberian ham? Today I bring you a very healthy proposal, so they can say that eating pizza is fattening or not very healthy. If you use quinoa for the base and the main ingredients are not kilos of cheese and pepperoni, but some lighter ones, like the ones I propose today, I assure you that you will have a super complete and very healthy dish.
- A cup of quinoa
- One egg
- 2 tablespoons Parmesan cheese
- Pepper
- Salt
- Arugula
- Fresh mozzarella
- 2 figs
- 100 gr of Iberian ham
- Caramelized seeds (optional)
STEP BY STEP RECIPE:
- The first thing you always have to do with quinoa is to wash it very well before cooking it. Put it in a strainer and under running tap water, and you will see how some bubbles come out (it is the saponin, a bitter tasting toxin). It will be ready to cook when they disappear. Bring two cups of water to a boil and then add a cup of quinoa and a teaspoon of salt. Boil over medium heat until all the water evaporates.
- Let cool slightly and mix with an egg and 2 tablespoons of grated Parmesan.
- Put the mixture on a tray with baking paper and press with your hand to make a round pizza base. Bake at 180ºc until golden brown, about 20 minutes.
- Then I finished it with arugula, fresh mozzarella balls, shavings of Iberian ham, cherry tomatoes, fig pieces and caramelized sunflower seeds, which contrast perfectly with the salty ham!
- In this last step you can make it with whatever you like, even the classic one. For this you can bake the base for 10 minutes, then take it out and put the tomato sauce, cheese, ham, mushrooms, etc., and
finish baking for another 10/15 minutes.
