Rabbit stew with almond sauce and a touch of cinnamon
This rabbit stew with almond sauce and a touch of cinnamon, This is one of those recipes that remind me of autumn. The aroma of roasted nuts reminds me of the forest and the walks in search of mushrooms, and the sauce to dip with bread feels wonderful when the cold starts to bite.
The touch of cinnamon, light but noticeable, goes wonderfully with it and makes this recipe very special.

INGREDIENTS:
- 1 kg of rabbit, cleaned and cut into pieces

- 1 onion
- 2 cloves garlic
- 1 slice of bread
- 50 gr of almonds
- Flour
- Parsley
- 1 glass of water
- 1 glass of white wine
- 1/2 teaspoon cinnamon powder 1/2 teaspoon cinnamon powder
- 1/2 glass of olive oil
- Salt
- Pepper
STEP BY STEP RECIPE:
- Season the pieces of rabbit with salt and pepper. In an express pot or casserole, pour the oil and heat over medium heat. Dredge the rabbit lightly in flour and brown. Remove and reserve.
- In the same oil we fry the slice of bread and the almonds if they are raw (if they are fried it is not necessary). Remove to a mortar and pestle with some parsley leaves.
- Chop the peeled onion and two cloves of garlic and poach over low heat with half a teaspoon of salt in the remaining oil in the pan for about 10 minutes.
- In the meantime, we crush the mortar and dilute it with the glass of water.
- Once the onion and garlic are sautéed, add the rabbit and stir, then add the white wine and turn up the heat so that the alcohol evaporates for a couple of minutes.
- Add half a teaspoon of cinnamon powder, stir, and then add the almond mixture with the bread and water.
- Close the pot, and when it starts to steam, lower the heat to medium and leave it for 12 minutes. If you do it in a normal pot or casserole leave it half an hour over medium-low heat. As it will be longer, if you see that the liquid evaporates and there is little sauce left, add a little more water.
