Raspberry cheesecake ice lollies
Many of us love cheesecake, don't you? Well, these raspberry cheesecake ice lollies is a different way to cool off in summer with your favorite cake!
- 250 gr of raspberries
- 200 of cream cheese or mascarpone
- 250 gr Greek yogurt
- 4o gr of brown sugar
- 40 gr butter
- 14 Maria type or 7 Digestive type cookies
STEP BY STEP RECIPE:
- In a mixer put all the ingredients, except the cookies and butter, and beat or mash until you obtain a smooth cream without lumps. If necessary with the help of a spatula, lower what has remained on the walls of the mixer, and beat again.
- Fill 4 popsicle molds, but do not fill them to the top. Do not forget to put the popsicle sticks in the freezer and leave them for at least 2 hours.
- Clean the mixer. Melt the butter in the microwave on medium heat. Pour the cookies into the mixer and crush until there are no uneven or large chunks, but as if it were a land. Add the butter and beat again.
- Take the popsicles out of the freezer, fill them with the cookie mixture pressing with a spatula or clean hands and put them back in the freezer. In an hour you will be able to unmold them and eat them!
