Spiced roasted pumpkin dip

This delicious spiced roasted pumpkin dip will surprise you. Simple but at the same time an explosion of aromas and flavors.

Take advantage of the pumpkin in season, which besides being a delicious vegetable, is very healthy.

Contains abundant antioxidants. Vitamin C, vitamin E and beta-carotene support eye health and prevent degenerative damage in older adults. It is low in calories and has plenty of fiber.

INGREDIENTS: (4 servings)
  • 1 pumpkin peanut
  • 1 tablespoon tahini
  • 1/2 teaspoon cumin grains
  • 1/2 of Thyme 
  • 1/2 of coriander seeds 
  • Then I add:
  • 1/2 nutmeg
  • 1/2 of paprika
  • 1/2 chili flakes 
  • Extra virgin olive oil
  • Honey drizzle
  • 2 tablespoons pumpkin seeds and sesame seeds
  • Salt and black pepper
  • Pita bread
STEP-BY-STEP PREPARATION: (click here to see the video recipe)
  1. Split the pumpkin in two and cover with foil and bake for 50’ at 200ºC. We will use half of it. The other half you can beat with a little vegetable or chicken broth and you can make a great cream to which you can add some spices, and when serving a little parmesan and sunflower seeds.
  2. Remove the flesh with a spoon, discarding the skin, and place it in a blender.
  3. Put all the spices in a mortar and pestle.
  4. Incorporate the pumpkin and beat with a little salt, pepper, a good splash of olive oil and a tablespoon of tahini.
  5. Toast some pumpkin and sesame seeds in a frying pan over low heat so they don't burn.
  6. Serve the pumpkin on a plate, put the seeds on top and another good splash of olive oil, sprinkle another little bit of paprika, and as a thread a little bit of honey. 
  7. Delicious with warm pita bread or a good toast.
