Whole wheat spiced apple and seeds sponge cake

Shall we add another healthy cake to the list? Whole wheat spiced apple and seeds sponge cake. Ideal as a breakfast or snack, full of nutrients, fiber, minerals and vitamins.

Ingredients:

  • 3 eggs
  • 50 gr of cane or panela sugarWhole wheat spiced apple and seeds sponge cake
  • 50 gr agave syrup
  • 120 ml sunflower oil
  • 200 gr of whole wheat flour
  • 1/2 apple
  • 50 gr Linwood mixed seeds (flax, chia, apple and cinnamon)
  • 30 gr Medina toppings: chopped walnuts, sunflower seeds, cranberries and chocolate tears
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon of cardomom seeds
  • 1 sachet of baking powder

Recipe elaboration step by step:

  1.  Preheat the oven to 180º c.
  2. In a bowl beat the eggs well. Add the sugar and syrup and beat well.
  3. Then add the oil and beat again until it is well emulsified.
  4. Add the rest of the ingredients except the apple, which are the dry ingredients, and beat again until a homogeneous texture is obtained.
  5. Finally peel the apple and grate half of it and add it to the previous mixture and stir.
  6. Grease a cake pan. Pour the mixture and toppings to taste.
  7. Bake for about 35 minutes. Do not open the oven before 20 minutes of baking time. Wait 30 minutes to prick and if the knife comes out clean it is done.
  8. Decorate again with toppings and if desired with a little powdered sugar.

This whole wheat spiced apple and seed cake is delicious and ideal for breakfast as a snack!
