Steamed cod with pear mayonnaise

There are no more excuses for not eating fish! steamed cod with pear mayonnaise on a bed of spinach, is a delight, a spectacular combination of flavors and a very healthy proposal, since we combine protein made without fat, steamed, with vegetables, sautéed spinach and a fruit, the pear added to the mayonnaise. If you want to complete the meal with some carbohydrates, you only need to accompany it with a slice of seeded bread, for example, or some boiled quinoa.

INGREDIENTS : ( 4 servings)steamed cod with pear mayonnaise

  • 8 pieces of cod desalting
  • A bag of fresh spinach
  • 1 garlic
  • Raisins and pine nuts
  • One egg
  • Olive oil and sunflower oil
  • Lemon squeeze
  • 1/2 ripe pear
  • Salt

STEP BY STEP RECIPE:

  1. Heat a drizzle of olive oil in a frying pan and toast a handful of pine nuts and raisins. Remove and set aside. If you use a monsieur cuisine, press the sauté button for 4 minutes.
  2. Cut the garlic very finely and brown it in the pan with another little olive oil (in the robot, sauté button 3 minutes). Add the spinach leaves and two tablespoons of water, the raisins and pine nuts and a pinch of salt, and sauté for 7 minutes (sauté button).
  3. If you use the robot, while the spinach is frying, place the steam container that also serves as a lid that closes the robot, and inside place the pieces of cod and place the transparent lid on top.
  4. If you do not have this robot, put water to boil in a saucepan, put a strainer that fits well with care that the water does not touch it. Place the cod in the strainer and close with a lid and leave for about 5/ 7 minutes.
  5. Finally, make the pear mayonnaise, either with the robot (washed) or with a turmix. Put the egg, a squeeze of lemon and a pinch of salt, a drizzle of olive oil and half a peeled pear in pieces. Put it on speed 5 and through the hole you add little by little sunflower oil, until you see that the mayonnaise thickens.
  6.  In a baking dish place the spinach all over the bottom, the cod pieces on top and the mayonnaise sauce on top of the cod. Turn on the broiler and broil until the mayonnaise turns golden brown.
