Tiramisu in a glass with slices of white chocolate
Yesterday I was lucky enough to do a live show with Rocio Arroyo, She is a pastry chef and has a program on Canal Cocina, during which she guided me to make her recipe of tiramisu in a glass with slices of white chocolate.
I learned how to make pasta bomba, a way to cook the yolks so they don't go raw (better to avoid intoxication) and to get a spectacular mousse texture (watch my stories and you'll see for yourself).
The way to present it as a cocktail was my idea and that's how it turned out, although Rocío gave me the idea of decorating it with some slices, for which she only has to melt chocolate in the microwave at medium power, spread it very thinly on baking paper, cool and then break it.
INGREDIENTS: (for 4 glasses):
- 250 gr of mascarpone

- 150 gr of cream 35%MG
- 3 yolks
- 2 small gelatine sheets (approx. 3.3 g.)
- 50 g sugar +2 tablespoons
- 30 ml of water
- Liquid coffee
- Pure cocoa powder
- Soletilla biscuits
- Amaretto (optional)
STEP BY STEP RECIPE:
- Hydrate 2 sheets of gelatin in water.
- We are going to make a syrup. In a saucepan put 50 grams of sugar and 30 ml of water and leave over medium low heat until it reaches 121 degrees. Remove from heat.
- Meanwhile, put the yolks of 3 eggs in a bowl and beat with an electric whisk until they whiten. Then add the syrup to the yolks little by little, in a thin trickle.
- In another bowl put 250 gr of mascarpone or cream cheese and 150 gr of cream 35%MG and beat until you get a homogeneous cream.
- Remove the gelatin sheets from the water, drain them by hand and dry them on absorbent paper. Put them in a glass and melt them 2/3 sec in the microwave. Incorporate them into the egg yolk cream and whisk.
- Now it is time to pour the egg yolk mixture over the mascarpone mixture. Mix it all with a spatula with wrapping movements.
- Choose the container of your choice, cups, glasses, cake molds ...
- Make a syrup with liquid coffee and sugar and a dash of amaretto (optional), or simply mix them (I just put a deep dish of hot coffee with 2 tablespoons of sugar to dissolve).
- Dampen the sponge cakes and place them in the base of the bowl. Pour a little cream and black cocoa powder and make as many layers as you can to fill the bowl and finish with cocoa powder again.
- Let it cool in the fridge for at least 3 hours, enjoy!
Learning doesn't take up space, and you always learn something new! tiramisu in a glass with slices of white chocolate I have learned that it is better to cook the yolks and not use them raw to avoid intoxication. Or use it pasteurized if you can get it.
