Chocolate and strawberry triple decker cake

I couldn't have celebrated my birthday better than with a beautiful and delicious triple decker chocolate and strawberry cake. . And to innovate, I have prepared a different topping and filling to how it is usually done, keep reading and let me know what you think!

INGREDIENTS for the cake bases:Chocolate and strawberry triple decker cake

  • 3 eggs
  • 200 gr wheat flour
  • 150 gr of fondant chocolate (min. 50% cocoa)
  • 70 gr pure cocoa powder
  • 150 gr white sugar
  • 100 gr of brown sugar
  • 200 gr of butter
  • 80 gr cream (min.30% fat)
  • 50 gr of water
  • 1 sachet of baking powder
  • 1 teaspoon of baking soda
  • 1 pinch of salt

For the chocolate coating:

  • 12 soaked dates
  • 30 gr pure cocoa powder
  • 3 tablespoons peanut butter
  • 80 ml coconut cream
  • 1 pinch of Maldon salt
  • Strawberries

For the pie filling:

  • 100 gr of fondant chocolate
  • 20 gr pure cocoa powder
  • 70 gr of butter
  • 100 gr cream (min.30% fat)triple decker chocolate and strawberry cake
  • 300 gr of condensed milk
  • 1 pinch of salt

STEP BY STEP RECIPE:

  1. For the cake,In a bowl, sift the flour, cocoa, baking soda and baking powder and mix with a spatula.
  2. With a whisk, or in a food processor, beat the eggs with the sugar and pinch of salt until a whitish foamy cream. Add the cream and brown sugar and beat again for a minute.
  3. In another bowl, add the chopped chocolate, butter and water and heat in the microwave on medium power for two minutes. Remove, stir with a spatula until the chocolate is completely melted. If not, put it back in the microwave half a minute more and repeat until it is a homogeneous cream, without lumps.
  4. Add this mixture to the previous mixture and beat for half a minute.
  5. Line three 18 cm diameter springform pans with baking paper, or grease well with butter and sprinkle a teaspoon of flour to prevent the cake from sticking. Preheat the oven to 180ºc.triple decker chocolate and strawberry cake
  6. Incorporate the mixture of the dry ingredients from step 1 little by little, to the liquid mixture that we have in the robot, beat at low speed 10 seconds and then, with a spatula, stir gently to finish mixing all the ingredients well.
  7. Divide the dough equally in each mold and introduce the molds in the top and middle part of the oven for 10 minutes and then change the bottom ones for the top ones and vice versa and leave for another 10 minutes. Remove and let cool for 10 minutes. Unmold and leave the cakes on a wire rack to cool completely.
  8. For the filling cream, Again, with the help of a food processor, add the chopped chocolate and pure cocoa and beat until the chocolate is completely powdered. With the spatula, lower the ingredients. In a saucepan, add the chocolate, butter, salt, cream and condensed milk, and heat over medium heat, stirring constantly with a whisk to melt the chocolate and make a cream. Remove and leave to cool and then in the refrigerator for at least one hour. After this time, it will have solidified a little but use the food processor to beat one or two minutes at medium speed until a cream is obtained.
  9. For coverage, If the dates have been soaked for a few hours in a bowl, covered with water, it is necessary to soak them for a few hours, so that they are soft and it is easier to obtain a mass or date caramel. To do this, drain the dates and blend them in the food processor until you get a kind of jam. Remove the ingredients from the walls with a spatula and beat again. Then add the rest of the ingredients and beat until you obtain a homogeneous cream. Depending on the type of peanut butter you use (some are thicker and some are more liquid) this cream will be thicker or not, so if necessary, add a little more coconut milk or not.
  10. Shall we assemble the cake? Very easy, put a base of sponge cake, spread a little filling over the entire surface, put another layer of sponge cake, repeat the process and put the third layer on top. Now cover with the topping cream. To finish, melt some fondant chocolate in the microwave and then dip the tips of the strawberries in the chocolate and place them on baking paper to solidify the chocolate. Decorate with these strawberries and READY!!! the chocolate and strawberry triple decker cake is ready! .

It seems a lot, but it is not difficult at all! It is a very special cake with a great chocolate flavor, but very soft and with that special touch of peanuts and coconut that make it a more authentic cake.
