Moon zucchini stuffed with quinoa and curry prawns

Who said that eating healthy is boring? Today I leave you with this delicious idea for some moon zucchini stuffed with quinoa and curry prawns. You can't imagine how delicious they are, they are very healthy, a very complete dish and very satisfying (for those who are on a diet), so you have no excuse to stop trying them!

INGREDIENTS:

  • 4 zucchini luna or roundzucchini stuffed with curried quinoa
  • 200 gr of quinoa
  • 200 gr of shrimp
  • 1 carrot
  • 1 medium chive
  • 2 teaspoons curry
  • 4 tablespoons coconut milk
  • 1 tablespoon cream cheese
  • Salt and pepper

STEP BY STEP RECIPE:

  1. The first thing we will do is empty the zucchini, with the help of a large spoon, and we will chop the zucchini flesh.
  2. Then we boil the zucchini in abundant water with a little salt, until when we prick with a knife we see that they are soft (about 7 minutes). Then let them drain in a colander.
  3. Cut the onion and the carrot in brunoise (in small cubes) and sauté together with the stuffing of the pumpkin with a little oil and salt.
  4. In the meantime we boil the quinoa. First remember to wash it well under the tap until you see that it does not foam. Boil it in two quantities of water for one quantity of quinoa (to do so, put the 200 gr of quinoa in a glass and pour twice its measure in water). Add a little salt and let it boil over medium heat until the water has been consumed and you see that the quinoa has opened.
  5. Once the vegetables are poached, add a teaspoon of curry and stir well, turn up the heat and add the shrimp, which we sauté for about 3 minutes so that they are not too dry. Add the quinoa and stir so that all the flavors are well integrated and the quinoa is mixed with all the vegetables.
  6. In a saucepan, heat the coconut milk with the other teaspoon of curry and cream cheese, and stir until you obtain a light sauce. Add salt and a pinch of pepper.
  7. Now all that's left is to plate it! We take a zucchini moon, pour a little sauce on the bottom, fill it with the farce and pour again a little sauce on top and ready, repeat with the rest of zucchini and we have our delicious zucchini moon ready!
