INGREDIENTS:
  • 2 eggplants
  • 200 gr of pumpkin peeled (optional)
  • 2 teaspoons Tahini (sesame paste)
  • 3 tablespoons of Aove
  • 1/2 teaspoon salt
  • Pinch of pepper
  • 1/2 clove of peeled garlic without germ
  • Juice of half a lemon
  • 1 tablespoon of water
  • 1 pomegranate or grapes
  • Fresh mint leaves
  • Sesame seeds

*Salsa:

  • 1 Greek yogurt
  • 50 ml mayonnaise
  • 1 teaspoon oregano
  • 1 teaspoon chopped mint
  • Juice of half a lemon

  1. Wash the eggplants, cut in half lengthwise, make some cuts in the flesh, without breaking the skin, season with salt and pepper and add a dash of Aove.Baba ganoush or eggplant mousse my way
  2. We put it in a tray, along with the pumpkin also cut into pieces and with salt, pepper and oil and roast in the oven at 180 degrees about 35/45 minutes. They have to be lightly browned and soft. It depends on the oven and the size of the vegetables. Click to see if they are done.
  3. Make the sauce: put the ingredients in a bowl and stir.
  4. Once the squash and eggplants are roasted, remove the flesh of the eggplant with a spoon and discard the skin.
  5. In a blender, put the flesh of the eggplant and roasted pumpkin and the rest of the ingredients until a cream is obtained.
  6. In a serving dish, or individual plate, serve the mousse, with a little sauce on top. Sprinkle some seeds and chopped mint, and some pomegranate seeds. If you can't find any, a few pieces of seedless grapes.
