Baked sea bream with quinoa and broccoli salad
Healthy, very healthy this baked sea bream with quinoa and broccoli salad. A luxury of fish and a side dish full of vitamins.
I have not eaten this fish very often, it is not cheap, but for special occasions it is worth it. Tasty, meaty but at the same time delicate, you will love it! and if we bake it in the oven, it is easy and we take advantage of everything.
INGREDIENTS: ( 4 persons)
- A sea bream 1 kg/ 1.2 kg
- 4 sweet onions
- 1 chili pepper
- 4 cloves of garlic
- 2 lemons
- Aove
- 1/2 glass of white wine
- Salt
- Pepper
For the salad:
- 1 cup of quinoa
- 1 and 1/2 of water
- 1/2 red bell pepper
- 1 bunch of broccoli
- 1 green apple
- 1 teaspoon of honey
- 1 teaspoon mustard
- 1 tablespoon apple cider vinegar
- 50 ml of Aove
- 1/2 teaspoon salt.
STEP BY STEP RECIPE:
- Cut the onions into julienne strips and the garlic into slices. Pour a splash of olive oil in a large frying pan, brown the garlic with the chili peppers, add the onions, a pinch of salt and cook over low heat for 10 minutes.
- At the fishmonger's they ask you to remove the guts. to sea bream, and as it is, run it under running cold water and then dry it with a clean cloth. Preheat the oven to 180ºc with heat up and down. Spread the onion in a large baking dish. Place the sea bream on top, make 4 or 5 transverse cuts. Pour half a glass of white wine, the juice of a lemon, a drizzle of olive oil, season with salt and pepper and place the other lemon slices inside the cuts of the sea bream. sea bream, as in the photo.
- Put it in the oven. It depends on the size of the sea bream, but for the indicated weight it would be about 25 minutes. Take out the sea bream and cut a little to see if near the bone it is done or raw. If not, roast for a few more minutes. During cooking, if you see that the liquid has evaporated you can add another little bit of wine.
- Meanwhile we make the salad. Wash the quinoa well under the tap, you will see how some bubbles or foam come out. Let the water run, stirring with your hand until they disappear. Put the quinoa in a casserole, turn on the heat and toast the grain a little, then the flavor will be more intense with hints of nuts. Pour the water, bring to a boil, add a teaspoon of salt and boil the quinoa over medium heat until it has evaporated completely.
- In a mincer, add the rest of the ingredients. Remove the stems from the broccoli (you can reserve them for a cream or to cut them finely and sauté them with garlic, for example). Wash the peppers and peel and core the apple. Chop everything together until you have small pieces. Then mix with the quinoa and taste to see if it needs some more salt or seasoning. Rectify if necessary.
- Now it is time to serve with a good piece of sea bream accompanied by sweet onion and a little salad, which in my case I have put with the help of a cooking ring.
