Cold pear and cucumber soup with feta cheese
Summer is not over yet and this cold pear and cucumber soup with feta cheese, You will love it, it is super refreshing and you take advantage of the water pears that are in season.
This pear ercolini, The fruit is native to Tuscany, Italy, but is widely produced in Spain. With thin skin, white pulp, without granules, they are very juicy and refreshing. Their flavor is sweet and their aroma is slightly perfumed; they are perfect for the preparation of this soup!
It is made in 5 minutes and all you have to do is whisk, it couldn't be easier. This is how it is done:
INGREDIENTS:
- 6 water pears or ercolini
- 1 cucumber
- 100 ml of ideal milk
- Juice of half a lemon
- 2 tablespoons of Aove
- A pinch of freshly ground pepper
- 1/2 teaspoon salt
- Feta cheese or any blue cheese (gorgonzola, roquefort ...)
- Chopped walnuts, pumpkin seeds or sunflower seeds
STEP BY STEP RECIPE:
- The first thing to do is peel the pears and cucumber and cut into pieces.
- Add everything except the feta cheese and the seeds to a blender. Blend at progressive speed, low to high and leave for a couple of minutes at high speed until everything is well blended.
- Serve in a bowl and decorate with feta cheese, or your favorite blue cheese in small pieces, a dash of olive oil, a little bit of pepper and some chopped walnuts or pumpkin or sunflower seeds.
