Baked turkey breast with dried apricots and orange marmalade
This recipe for baked turkey breast with dried apricots and orange marmalade is very easy, healthy and tasty. In addition, it gives a lot of itself, so you can use the leftovers as cold meat, for sandwiches, salads, etc.
INGREDIENTS:
- A turkey breast (approx.1 kg)

- 12 dried apricots
- 3 sweet onions
- 50 gr orange marmalade
- 300 ml of poultry stock
- 50 ml brandy
- 2 tablespoons of virgin olive oil
- Pepper and salt
STEP-BY-STEP PREPARATION:
- Preheat the oven with fan and heat up and down to 180ªC.
- All you have to do is peel and cut the onions into quarters, and
put them together with the breast and the dried apricots in a baking dish.
- Season the breast with salt and pepper, spread the jam over the breast, sprinkle with brandy and broth, and drizzle with extra virgin olive oil.
- Bake for an hour and a quarter. This time depends on each oven and whether or not it has a fan, and the exact weight of the breast. I found it very juicy with this time.

*IMPORTANT: with the help of a spoon, you have to water the breast every 10/15 minutes, that way it will be juicy, and if you don't do it, it will probably be dry. You will see that the liquid will evaporate and at the end the garnish will be tasty and toasted.
This baked turkey breast with dried apricots and orange marmalade is already baked. In addition to protein and hardly any fat, it provides you with minerals and vitamins.
