Pitas with marinated chicken and sheep yogurt sauce

Do you like Arabic food? With these pitas with marinated chicken and sheep yogurt sauce, at home we have moved to the Orient. 

I have tried to get those flavors so characteristic of Arabic cuisine such as kebaks. I have marinated the chicken meat (which could also be lamb) with a mixture of spices such as cumin, paprika... and then bathed with a sauce based on sheep yogurt very creamy and intense flavor, which also provides us with a lot of calcium and vitamins.

INGREDIENTS: ( 4 servings)Pitas with marinated chicken and sheep yogurt sauce
  • 400 gr of chicken breasts chicken (you can also use turkey or chicken meatballs, or beef meatballs) 
  • 4 pita breads
  • 100 ml of sheep yogurt or Greek style
  • 1 tablespoon of mayonnaise
  • Fresh cilantro
  • 1 tomato 
  • 1/2 red onion
  • 1 tablespoon Dijon mustard
  • 2 tablespoons of honey
  • 1 teaspoon sweet paprika
  • 1 teaspoon cumin
  • 1 clove garlic
  • 1 lemon
  • 1/2 teaspoon oregano
  • Salt 
  • Pepper
  • 3 tablespoon of virgin olive oil

STEP BY STEP RECIPE:

  1. The first thing to do is to cut the breasts into cubes of about 2 cm, and put them in a bowl and add half a teaspoon of salt, a pinch of black pepper, paprika and cumin, mustard, honey (if it is too thick, melt it for a few seconds in the microwave), the juice of half a lemon, a peeled and crushed clove of garlic, some chopped coriander leaves. Stir everything very well and let it macerate in the refrigerator for at least one hour.turkey meatballs Arabic style
  2. The sauce is very easy: in a small bowl pour the yogurt, mayonnaise, a splash of lemon juice (squeeze half a lemon), oregano and a pinch of salt and stir well.
  3. Heat the oil in a large frying pan, add the marinated chicken and brown first over medium high heat but be careful not to burn it, then lower the heat and cook for 5 minutes or until you see that it is done (if you cut a piece you will see if the meat is white, then it is done, but if it is still pink it is raw). The cooking time depends on how thick you have made the pieces.
  4. Heat the pita bread according to the manufacturer's instructions (it can be in the oven or in the toaster). Open the breads half sideways, add a couple of slices of tomato, fill with the chicken and add on top, some julienned onion, some coriander leaves if you like, and bathe with one or two tablespoons of sauce. 
  5. If one pita seems too much, cut them in two as in the picture, and repeat the previous steps.
