This beet hummus salad with green beans and burrata, It is full of flavor and different textures, it is sumptuous but crunchy at the same time! you will love it.

INGREDIENTS: (1 portion to share)

  • 180 g cooked chickpeas
  • 1/2 beet
  • 1 tablespoon tahini (sesame paste)
  • 2 tablespoons extra virgin olive oil
  • Juice of 1/2 lemon
  • 1/2 clove garlic
  • 1/2 teaspoon ground cumin
  • 2 tablespoons of water
  • 150 gr of cooked or steamed green beans
  • 1 burrata
  • 50 gr of walnuts
  • Assorted seeds: sesame, chia, sunflower and pumpkin.
  • Extra virgin olive oil
  • Salt, pepper

STEP-BY-STEP PREPARATION:

  1. First we will make the hummus: Just put all the ingredients in the blender and blend until very creamy. At the beginning and sometimes, the blades get stuck, so you will have to stop the blender and use a spatula to stir and blend again.
  2. Always taste for salt or lemon or cumin or tahini. 
  3. Add a little more water if it is too thick or lumpy. To make it creamier, beat more and add a little more water.
  4. Finally we prepare the dish by putting the hummus on the base, then adding around the steamed green beans, a burrata in the center, two handfuls of chopped walnuts that you have toasted lightly in a pan and a handful of assorted seeds. Finish with salt and pepper and a good splash of Aove.
    Serve with some biscotti or the bread of your choice and spread and enjoy!
