This homemade salmorejo of cherries and picotas with the pickle brochette is brutal. A very special salmorejo with a touch of acid and sweetness at the same time and with the contrast of the pickles that will surprise you very well!
It is a super cool recipe for summer, very easy to make, to which we provide all the benefits of the picotas seasonal products, a real nutritional treasure that provides good doses of vitamins C, A and K, minerals (potassium, magnesium, iron, calcium), fiber, and folic acid.
They help to regulate the intestinal transit thanks to its high fiber and water content , They help us to fall asleep and favor the regulation of muscle contraction, as well as relieve muscle pains as they contain many milligrams of potassium.

INGREDIENTS: (4 servings)
- 700 gr pear tomatoes small tomatoes
- 200 g of stoned pecked peppers
- Teaspoon of salt
- EVOO about 50 gr
- 1 tablespoon apple cider vinegar
- 1 clove of garlic , without the germ
- Pinch of cinnamon
- 1 sourdough roll or two if you want it thicker (100 to 200gr)
- Brochette: sweet gherkin, olive with anchovy, two halves of picota, two pieces of smoked sardine and piparra (customize to your liking!).

- First soak the bread in cold water to soften it completely and drain well.
- Put it in a food processor or blender with the rest of the ingredients and blend well until creamy.
- Taste and adjust salt or vinegar if necessary, always to your taste!
- For the brochette, you only have to prick on a stick the sweet gherkin, olive with anchovy, two halves of picota, two pieces of smoked sardine and a piparra.
