INGREDIENTS:
- Boiled leeks

- 2 tablespoons capers
- 400 gr of stripe
- 70 gr of butter
- 3 tablespoons wine vinegar
- Salt
- Pepper
- Laurel
STEP BY STEP RECIPE:
- Put plenty of water in a saucepan and bring to the boil. Add a teaspoon of salt and a couple of bay leaves and boil the skate over medium heat for 7 minutes.
- Remove and drain carefully as the skate is usually very tender and falls apart quickly.
- Heat the butter in a large frying pan over medium heat. We move the pan in circular movements until the butter acquires a toasted tone.
- Add the pieces of skate and move the pan again so that the skate is well soaked in the butter.
- Add the vinegar. Be careful that it will splash a little, and we also add the capers and with a spoon we sprinkle the skate with the sauce. Add a little freshly ground black pepper on top and it is ready. We spread them on the plates.
- In the same pan place the boiled leeks and brown them.
- Place a couple of leeks next to the skate on each plate.
In just ten minutes we have prepared an exquisite black butter skate with leeks!
