Healthy natural orange sponge cake

This healthy natural orange cake, It is a classic, at least I remember it being made a lot in my house when we were little.

It is very simple to make and I assure you that it is delicious with that touch of natural orange, which makes it very juicy, due to the juice of the fruit itself. Of course, use a good quality orange, one of those juicy, fleshy and sweet, like a good Valencian orange.

To make it a little healthier, I have allowed myself to substitute the butter for extra virgin olive oil (you can also use the mild one if you prefer less intensity in the final flavor), which goes very well with the touch of orange, and the white sugar for brown or better if it is panela.

You can also use whole wheat flour to give your cake more fiber and nutrients. I leave you both pictures so you can see how they look like.

INGREDIENTS:

  • 250 gr normal or whole wheat flour
  • 100 gr of panela or brown sugar
  • 3 tablespoons of honey
  • 1 Valencian orange of juice
  • 3 eggs
  • 100 gr extra virgin olive oil
  • 1 plain yogurt
  • 1 sachet of yeast
  • A pinch of salt

STEP BY STEP RECIPE:

  1. With the help of a peeler, I remove the peel from the orange, but only the peel part. orangehealthy natural orange cake, I peel the oranges with the peeler, so it is much better. Then I remove the white part with my hands and discard it (for my taste, it gives a bitter touch to the cake, depending on the type of orange, it can be very bitter).
  2. I put in a bowl, the panela or sugar, honey, eggs and the chopped orange and its orange peel. I beat until frothy. Then I add the oil and the yogurt and beat again.
  3. Finally I add the dry ingredients (sifted flour, yeast and salt) and beat until the dough is smooth.
  4. I grease a plum-cake or sponge cake pan and pour the batter. I bake in a preheated oven at 180ºc for about 30 minutes. If I prick it with a knife and it comes out clean (no lumps or dough stuck) it is ready!
  5. If you like, sprinkle with a little powdered sugar.
