Broccoli, goat cheese and caramelized onion quiche
Have you ever tasted a quiche? broccoli, goat cheese and caramelized onion quiche you will fall in love with it. It is a spectacular contrast of sweet and salty and we also add some vegetables, so important in our daily diet. Do you dare to make it with me?
Ingredients for 2/3 servings:
- 1 sheet of butter puff pastry
- 1 broccoli floret
- 1 large onion
- 1 tablespoon brown sugar
- 50 gr of goat cheese of rulo (curl)
- 2 eggs
- 100 gr evaporated milk
- Salt
- Pepper
- Extra virgin olive oil (Aove)

Recipe elaboration step by step:
- In a saucepan pour a tablespoon of Aove, heat and add the onion cut into strips with a pinch of salt and sugar and let it simmer for 15/20 minutes until it is soft and caramelized (it does not have to be liquid).
- Preheat the oven to 180ºc.
- Wash the broccoli and cut it into small saplings. Place it in our silicone mold with lid, add a little salt and cover and cook it in the microwave at high power for 5 minutes. Remove and reserve the broccoli in a bowl. Dry the mold.
- Spread the puff pastry sheet and prick the entire surface with a fork. Place the dough on top of the mold, fit well at the base and corners and trim if there is too much dough on the outside. Place over the dough something that makes weight (another smaller mold) and bake for 8 minutes.
- Meanwhile in a bowl beat the eggs with the milk with a little salt and pepper, add the broccoli and the goat cheese in small pieces.
- Take the dough out of the oven, remove the mold from inside. Spread the caramelized onion on the base and then pour all the previous mixture. Put back in the oven and bake for about 20 minutes or until you see that the filling is set (you can check it either by moving it so that it is not liquid or by pricking it with the tip of a knife).
- And now we have this delicious broccoli, goat cheese and caramelized onion quiche, and if you take it freshly made, it is even better.
*SUGGESTION: you can make quiches with an infinite number of fillings: spinach and cheese, pumpkin and bacon, shrimp and leek, ham and cheese, tomatoes and onion, etc.
