Asian style pork tenderloin

Besides, it is an easy and quick dish to make. In 15 or 20 minutes you will have it ready.

INGREDIENTS: ( 4 servings)
  • 300 gr of basmati rice.
  • 620 ml of water for boiling the rice
  • 1/2 kg of pork loin.
  • 2 level tablespoons of flour.
  • 300 gr of spinach.
  • 2 handfuls of peanuts.
  • A handful of fresh cilantro.
  • 1 lime.
  • Salt .
  • Pepper.
  • Olive oil.
  • 1 handful of sesame seeds.

For the sauce:

  • 1 clove garlic
  • 150 gr teriyaki sauce
  • 200 ml of water
  • 1 small piece of ginger about the size of a walnut
  • Juice of 1 lime

RECIPE ELABORATION STEP BY STEP:
  1. Asian style pork tenderloinIn a saucepan put the water to boil with half a teaspoon of salt and add the rice, lower to medium heat, cover and cook for 10 minutes or until the water is absorbed.
  2. Meanwhile, finely chop the garlic and ginger and place in a bowl with the teriyaki sauce, lime juice, water and whisk with a fork. Grate the lime peel before squeezing and set aside.
  3. Cut the loin into strips and then into cubes and season with salt and pepper. Put it in a bowl with the flour and stir so that the flour is well impregnated in the tenderloin.
  4. In a large frying pan pour a couple of tablespoons of olive oil, heat and add the spinach sprouts. Stir, put a lid on the pan to steam the spinach sprouts and let them cook for a couple of minutes. Remove the lid, add a pinch of salt, stir and remove to a large bowl.
  5. In the same frying pan add a little oil, heat, add the tenderloin and lower to medium-high heat and brown without burning, about 3-5 minutes. Add the sauce that we had prepared and cook for another 3-5 minutes, stirring from time to time, until the sauce is slightly reduced and has thickened slightly.
  6. The rice will be cooked by now. Put it in the bowl with the spinach. Add a handful of slightly crushed peanuts, a handful of chopped fresh coriander and half the lime zest. Add a pinch of pepper and stir to combine.
  7. Now all that remains is to plate. In a nice bowl put the rice mixture on the base and sautéed tenderloin on top and drizzle with the sauce, add some chopped fresh coriander, sesame seeds, a few peanuts and lime zest, and you are ready to enjoy this dish. Asian style pork tenderloin.
