Cream of carrot cream with a touch of orange and ginger
I love this carrot cream with a touch of orange and ginger, because besides being tasty, you can eat it either hot or cold and it is a vitamin cocktail!
Its high content of vitamin C, strengthens our immune system (so important in times of Covid), helps us to absorb iron, maintains our tissues because it participates in the formation of the collagen and it is antioxidant, It fights free radicals and slows down aging.
In addition, carrots are rich in beta-carotene, that our body transforms them into vitamin A, fundamental for growth in general, especially for the skin and eye health. It will prepare our skin by protecting it from possible sunburn this summer.
What more could we ask for if it is delicious on top of that?
INGREDIENTS:
- 500 gr carrots
- Juice of 1/2 orange
- 1 onion
- 1 small piece of 2 cm of fresh ginger
- 350 ml vegetable or chicken broth
- 1 teaspoon salt
- Black pepper
- Aove
- Cottage cheese or fresh cheese and seeds as toppings
STEP BY STEP RECIPE:
- The first thing to do is to peel the onion and ginger, chop it and poach it in a pot with a couple of tablespoons of Aove and a pinch of salt for 5 minutes.
- Meanwhile, peel and cut the carrots into small pieces. Add them to the pot and sauté for another 5 minutes.
*Another option that I do a lot is to roast the carrots and onion in the oven when I turn it on to roast another dish and then I only have to grind them with the rest of the ingredients. - Add the broth, half a teaspoon of salt and cook over medium heat until the carrots are soft, about 15 minutes.
- Transfer everything to a blender or turmixer, add the juice and blend until it is fine and creamy. If it is too thick, you can add a little more broth and if it is too runny, pour it all back into the pot and let it reduce until you have the consistency you like. Taste and adjust the salt if necessary.
- When serving, put a little chopped fresh cheese on top, some pumpkin or sunflower seeds, a little black pepper and a drizzle of Aove.
