This cake cherry tomato tatin is a fantastic idea for a savory version of the famous French apple tart tatin.
If you have imagination, today we make it with colored tomatoes, but can you imagine making it with another vegetable or combination of them? I'll put you to the test!

INGREDIENTS: (4 servings)
- 300 g cherry tomatoes of various colors
- Shortcrust pastry or shortcrust pastry sheet
- 1 large sweet onion
- 2 cloves garlic
- 1 teaspoon cane sugar
- 2 tablespoons EVOO
- Salt and pepper
- Fresh basil

- First preheat the oven to 180ºc.
- Cut the cherry tomatoes in half. In a frying pan with two tablespoons of EVOO and a teaspoon of sugar, sauté the tomatoes for 3 minutes and set aside.
- Slice the garlic and slice the onion into a feather. In the same frying pan, with the juice released by the tomatoes, cook the garlic and onion, seasoned with salt and pepper, over medium heat for 8 minutes. Set aside.
- In a baking dish of about 20-24 cm in diameter, place the tomatoes cut side down and then place the onion and garlic evenly distributed on top.
- Finally, place the dough sheet on top, as shown in the video. Prick with a fork and bake for about 3o'o until golden brown (each oven is different).
- Remove and turn the mold onto a plate, and garnish with a few basil leaves and another fine drizzle of olive oil.
