Chicken Meatballs with Japanese Sauce
I discovered this recipe from chicken meatballs with Japanese sauce during my trip to Japan a few years ago, and since then I make them a lot at home, as they are really delicious and my daughters love them.
We must admit that anything with soy and some sugar is addictive, and I don't know if you know it, but many oriental recipes contain sugar, that's why they are so popular and when we eat them we can't stop repeating! The mirin, In case you didn't know, it is a kind of rice wine, similar to sake, but with a very low alcohol content. It is very sweet, so in the ingredients I have indicated what you can substitute it for if you do not find it or do not have it at hand.
INGREDIENTS: (4 people)
- 400 gr of chicken breasts chicken
- 1 tablespoon of soy sauce
- 1 tablespoon of mirin ( or one teaspoon of cane sugar)
- 1 spring onion
- 1 2 cm piece of fresh ginger
- 1 teaspoon sesame oil
- 1/3 egg
- 1 teaspoon cornstarch
- Chives
- Sunflower oil
For the sauce:
- 100 ml soy sauce
- 100 ml of mirin (or 50 ml of water 1 tablespoon of cane sugar)
- 1 tablespoon cane sugar
- 1 tablespoon oyster sauce
- 1 clove garlic
STEP BY STEP RECIPE:
- Cut the chicken breasts into small pieces and mince it with the help of a food processor or ask the butcher to mince it. We put it in a bowl.
- Finely chop the spring onion, the skinless ginger and some chives and add them to the chopped chicken.
- Add the rest of the ingredients except the sunflower oil and stir well so that the ingredients are well integrated.
- We form small balls, the size you like.
- Heat a little sunflower oil in a frying pan. We are throwing the meatballs carefully, and we are browning them on both sides. Put the lid on and let them cook over medium heat for 5 minutes so that they are cooked inside. Then, you can remove them to a plate with absorbent paper if you see that you have too much oil left over.
- Discard the sunflower oil if you have used too much, if you have used too little you can use it to make the sauce.
- Pour the sauce ingredients into the pan over medium heat, bring to a boil and stir until it thickens, being careful, as the sugar in the sauce can burn. When you see that the sauce is creamy, add the meatballs, sprinkle with the sauce and cook for a couple of minutes.
- Remove, and sprinkle a little chopped chives on top.
- Serve with white rice, or tres delicias, grilled green asparagus or broccoli. The mixture with the sauce is delicious!
