Coca with sardines and rosemary apples

In summer, a coca with sardines and rosemary apples, is a super healthy and delicious option to make the most of the season of this blue fish, The best months for its capture and consumption are July and August.

During these months, its good fat content, Omega 3, can reach levels of 20%. Omega 3 helps to lower cholesterol and triglyceride levels, in addition to increasing blood fluidity, which reduces the risk of atherosclerosis and thrombosis.

So now you know, eat a lot of sardines that besides being delicious, your health will thank you for it.

This recipe admits the quick version, which would be buying an already prepared empanada or pizza base, as well as canned sardines, like the one in the photo. The coca I made with the fresh ones, looked so good that we ate it and I forgot to take a picture of it, ha, ha.

INGREDIENTS:Coca with sardines and rosemary apples

Coca dough:

  • 50 gr extra virgin olive oil
  • 100 gr of water
  • 50 gr lard
  • 20 gr fresh baker's yeast, compressed
  • 300 gr of strong flour
  • 1 teaspoon salt
  • 1 pinch of sugar

Filling:

  • 10 clean sardines, without guts or bones, in loins.
  • 2 golden apples
  • 20 gr of butter
  • 4 tablespoons of water
  • 1 sprig of fresh rosemary
  • Water

RECIPE ELABORATION STEP BY STEP:
  1. If you have the thermomix, add the oil, water and butter. Program 1 min, at 37º, and speed 2.
  2. Add the yeast, flour, salt and sugar and mix at 30 sec, speed-6.
  3. Remove the dough from the mixing bowl and roll it out very thinly with a rolling pin or with your hands on a greased baking sheet or with baking paper. Let it rest for a few minutes.
  4. Meanwhile we make the rosemary apple. Peel, core and cut into small pieces the two apples. Put them in a saucepan with the butter and water and some finely chopped fresh rosemary leaves. Leave over medium heat until it is soft and all the water has evaporated.
  5.  Cover the coca with this apple compote, place the sardine loins on top, with a little salt and a few drops of olive oil on each loin, and bake for 20 minutes at 200ºc.
  6. Cut into individual pieces, to pick it up by hand.
