Coconut and chocolate whole wheat spelt mini donuts
I really wanted to make homemade donuts, I don't like to buy them because they have a lot of saturated fats, and I'm happy with this recipe from coconut and chocolate whole wheat spelled mini donuts, I'm so happy for them! Finally, healthy doughnuts!
INGREDIENTS: (for 6 minidonuts)
- 75 gr of whole wheat spelt flour
- 40 ml of virgin coconut butter
- 1 egg
- 125 gr natural yogurt
- 1/2 teaspoon of yeast
- 1 teaspoon orange peel zest
- 100 gr honey
- Chocolate 70% cocoa.
STEP BY STEP RECIPE:
- Melt the coconut butter in the microwave at low temperature, but only for a few seconds until you see that it is liquid but not hot... you can put it in for a few seconds, take it out, stir, and stir again.
- Mix with the yogurt and beat, then the egg and beat again until a creamy texture is obtained.
- Then add the honey and beat again and finally the rest of the ingredients until everything is well integrated.
- Grease the donut pan. Pour the dough with the help of a spoon up to about 3/4.
- Bake in a preheated oven at 180ºc for 15 minutes.
- Remove and let cool on a wire rack (I overturned the mold and they came out on their own).
- Chop the chocolate in a bowl, and add a teaspoon of coconut butter. Melt it in the microwave at medium temperature for one minute. Remove and stir until it is well melted. If necessary, repeat the operation. If you prefer, you can melt the chocolate in a bain-marie over low heat. We must be careful not to overheat the chocolate that burns easily and will give a very bad bitter taste.
- Take a donut with two fingers and dip one of its sides in the chocolate so that it is well covered, turn it over and leave it on the grid. Sprinkle a few chocolate-covered seeds, but you can put whatever you prefer: pistachios, cashew nuts....
