Homemade orange and chocolate brioches
Now that it has cooled down a bit again, it's nice to have one of these. homemade orange and chocolate brioches with a cup of coffee or hot chocolate and you'll be soaking wet! 🙂 They are ideal for breakfast or snack or even for dinner with a good glass of milk and a piece of fruit. INGREDIENTS:
- 120 gr butter
- 350 gr of strong flour
- 25 gr fresh yeast
- 4 cs sugar
- 4 cs of milk
- 3 eggs
- Grated peel of an orange
- Half orange juice
STEP BY STEP RECIPE:
- In a small bowl put the fresh yeast and the warm milk and with the help of a spoon or small rods dilute it. Stir well because it will take time to break up the lumps of yeast. Then add the sugar and stir and finally the eggs and beat until everything is well integrated. Let stand 15 to 20 minutes.

- In the meantime we grate the peel of an orange (previously washed). We try to only grate the orange part and not the white part. We also squeeze the juice of half an orange and add it.
- Once the 15 minutes have passed, in a large bowl pour all the flour, the orange zest and juice and the yeast mixture. With a wooden spatula I mix everything well. It will be very sticky. With your hands now, start kneading. At the beginning everything will stick between your fingers but keep kneading until you get a homogeneous and flexible dough and you will see how you will be able to work it without it being sticky. Form a ball, grease the bowl and let it rest, covered with plastic wrap for 40 minutes.
- After the time you will see how the dough has doubled its volume and has bubbles (effect of yeast !). When you take it with your hands again it will be a little sticky so work it a few more minutes until it is compact again. Break off pieces of dough the size of your palm, put a few tears or chocolate chips and make small balls of the same size with the help of both hands and making circles gently with the ball on a worktop (you can help yourself with a kitchen scale if you want to be exact with the size/weight of the balls).
- Grease a circular baking pan and place the balls one next to the other.
without being stuck to fill the entire mold (then when resting the dough will rise again and will remain stuck). Cover and let stand another 40 min. You will see how the dough rises again!
- Preheat the oven to 180ºc. Brush the scones with milk and bake for about 20-25 min. Remove, let stand and cover with powdered sugar!
