When you try this cod stew in tomato sauce with raisins and onions you will want to include it in your list of regular recipes, as it is nutritious, tasty, easy and delicious.
INGREDIENTS: (4 servings)
- 4 fresh cod slices or loins
- 3 cloves garlic
- 1 large onion
- 2 handfuls of raisins
- 200 g homemade tomato sauce
- 100 ml of white wine
- 1 teaspoon sweet paprika
- Aove
- Salt and pepper
- 2 hard-boiled eggs
- Fresh parsley
RECIPE ELABORATION STEP BY STEP:
- In a low saucepan or large frying pan, pour 4 tablespoons of Aove and heat over medium heat.
- Season the cod with salt and pepper and brown for 1 minute on each side. Remove to a plate and set aside.
- In the same oil and over low heat, brown the chopped garlic, then add the raisins and stir and then the chopped onion. Add half a teaspoon of salt, the paprika and stir and poach for 8 minutes.
- Meanwhile we boil 2 eggs for 12 minutes.
- Turn up the heat and add the wine. When the alcohol has evaporated, add the tomato sauce, submerge the cod in the sauce, shake the pan or casserole so that the cod is well soaked in the sauce and cook for about 5 minutes.
- The doneness of the fish always depends on its thickness and the intensity of the fire, so be careful not to let it get dry! With the help of a fork separate the meat a little and check if it is raw or not (when the color is still opaque and not white and offers resistance is that it is raw).
- Serve with a few slices of hard-boiled or chopped egg, as you prefer, and a little chopped fresh parsley.
